Contact Cards extend off the screen
For some users, Outlook's contact card is really wide, with the X to close it extending well of the side of the monitor. When they right-click on a email address and select Add to Contacts, the contact card opens with the name and address filled in, but because the right side extends off the screen, the user cannot save or close the card.
I have no idea why the card is too wide for some users (unless they changed the screen resolution), but it's easy to fix. The Contact card's height (and width) is stored in the registry and the fix is to either edit the Width value or delete the Width (Outlook will recreate the value if you delete it).
1. Press Windows key + R to open the Run dialog, type regedit and press Enter.
2. Browse the registry and locate HKEY_CURRENT_USER > Software > Microsoft > Office > 16.0 > Common > ContactCard
3. Right-click on Width value (on the right) and select Modify (or Delete, and let Outlook recreate the value.)
4. Select Decimal Base then type 720 in the Value Data field. (This is the default minimum width.)
5. Click OK
6. Close the registry editor
7. Open a Contact card to check the size. If it's too small, you can adjust the card size in Outlook, by pulling the handle in the lower right corner.

Automatically Add Addresses to Contacts
Outlook doesn’t have an option to automatically create contacts when you send mail to new addresses or reply but will automatically save the addresses to the autocomplete list (if you do not disable this option).
You have a few options if you need to add the addresses to contacts, not just the autocomplete list.
You can use a macro to create contacts, either as you reply to a message or run the macro on all messages in a folder. Instead of a macro, you can use a third party addin to create the contacts as you send and receive mail.
Save the contact manually by right-clicking on the address in the header area in the reading pane or opened message. Choose Save Outlook contact from the menu. This works in both Outlook desktop on Windows and Mac.
In Outlook on Windows and Outlook on the web, you can hover the cursor over the address to bring up the small contact card then click the 3 dots on the right and select Add to Contacts from the menu.
If you need to convert the autocomplete list to contacts, use my favorite (and Free!) autocomplete editor - NK2Edit by Nirsoft. It can export the autocomplete list to contacts or a CSV file.
